Wow! It’s been a while since we posted a new recipe, so I’m really excited that Hope is back with a great new recipe for summer!
It’s quick, simple, and was a hit with everyone! Toddler friendly, and #HungryHusbandApproved – you’re welcome.
After a day in the garden, the corn and tomato were used in the recipe!
Bennett was ready for this meal after a long day spent at the park, and gardening. Hope had a lot of extra time to be outside playing, since this recipe was so quick to prepare.

Tilapia Bowls with Avocado Cream Sauce
In a bowl, mix the following:
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- half tsp of salt
- quarter tsp of pepper
Rub this mixture on 1lb of Tilapia.
While broiling (we prefer grilling) your Tilapia, mix the following:
- half cup of plain greek yogurt
- juice of one lime
- 1 large avocado
- 1 garlic glove
Cook 3 cups of rice.
Now, in each bowl, assemble:
- Canned black beans
- Fresh corn
- Chopped tomato
- Avocado Cream Sauce
