bahama mama cobbler

This dessert was an on a whim success!

On Friday night, my mama-in-law made a peach cobbler for dessert and I knew immediately, we were going to HAVE to have her cobbler at our shower on Saturday!

Thankfully, this recipe is a quick and easy one, and since I had some strawberries to use up, we decided it would be perfect to make Saturday morning.

Except then we realized that about half the strawberries needed to be tossed. So we were short on fruit.

– insert genius here – what if we combined strawberries and mangoes? It would taste like our favorite fruity mixed drinks, minus the alcohol… #pregnant

So we combined the fruits, added some coconut flakes, and here you have it: Bahama Mama Cobbler!

Preheat oven to 425F

Put one stick of butter in a 9×13 baking pan, and place in oven until butter is melted.

Mix 1 cup self rising flour, 1 cup sugar, and 1 cup milk, and add to pan.

Sprinkle chopped strawberries and mangos on top.

Add coconut flakes to the top.

Bake for 30 minutes!

It really is that easy!
