Y’all! I had a dessert recipe WIN last night!
We had another round of #framilydinner (when your friends are basically your family)
We were in charge of garlic bread and dessert. I’m not the greatest cook in the world, but let me bake – I get creative. I present to you….
So I ended up taking a tray of White Chocolate Chip Cookies, Peanut Butter Chip Cookies, and these Pineapple Coconut Dessert Bars!
I started by making a batch of sugar cookie dough, using a typical sugar cookie recipe, but replaced the regular sugar for powdered sugar.
I put small, quarter sized balls of dough, into my Pampered Chef Brownie Pan and baked them for 15 minutes. They flattened out into the shape of brownies.
While they were baking, I pureed fresh pineapples and opened up the bag of coconut chips (found in the baking aisle in the grocery store)!
When the cookie base came out of the oven, I used a spoon to put pineapple puree over each cookie. Then sprinkled the coconut chips on top.
I placed them back into the oven (top rack) for just a few minutes to crisp up the coconut on top.
I used the rest of the dough to make regular round cookies, using my Pampered Chef Pizza Stone (trick – baking on a pizza stone. trust me). I topped these cookies with peanut butter chips, and white chocolate chips!
I’m actually not a huge dessert fan – so I haven’t had them! But it was neat to see all the guys love them so much! #HungryHusbandApproved
